Pasta and Salad

I am a huge fan of a pasta with a salad.  Maybe even a little bit of garlic bread!  And with the colder weather coming in, pastas, casseroles, soups and other comfort foods will be on everyone's table soon, I'm sure.  I purchased the latest edition of 'Delicious' magazine today and in it are two recipes I can't wait to try!

Shirley's Cheese Biscuits

My mother-in-law is hosting a lunch tomorrow for a friends birthday as well as her Bridge club and asked if I could help her by making a batch of these cheese biscuits.  I happily obliged and was even MORE happy that they taste so good and are now in my book of recipes!  An yours, now!  I don't know who Shirley is, but she knows how to make a biscuit!  These are scrummy savoury morsels and will go perfectly at her lunch tomorrow.  Happy baking!

The recipe is even complete with my mother-in-laws notes!

Who doesn't love a lamington?

On Sunday, I had a day of baking.  I looked through one of my favourite cookbooks, "The Country Table" and saw lamingtons jumping out at me from page 134.  I must say, I was a little hesitant due to my past experience trying to make a sponge, however I am glad to say that my lamingtons were a huge success!  They were fluffy and light and tasted absolutely delicious.  And the best part is, they are surprisingly very easy to make.  (I just got out the cookbook to scan to sharewith you all and out fell some coconut!)

My Mum bought me this cookbook when I first moved to the country.  It's fantastic and full of country-style cooking.  Soups, roasts, cakes, slices, biscuits, casseroles, stews etc.

I'm happy to sat my lamingtons looked exactly like the photo - always a good feeling!

Delicious Dessert with Hardly Any Effort

I absolutely love it when you come across a dish that is so delicious and easy to make!  This one below I served at a recent dinner party and it was a hit.  It was made even better by the fact that my dinner guests had no idea how easy it was!  (Until now, that is...)  Serve with fresh strawberries and a sprinkling of icing sugar.  Happy Cooking - almost!

Wonton Soup

I'm not sure about anyone else, but the words 'wontons' and 'soup' are music to my ears! So I was very excited to find a recipe in Donna Hay's book for lemongrass chicken wonton soup...
